Scotch Bonnet Hot Sauce


  • 1t Vegetable Oil

  • 18 Fresh Scotch Bonnet Peppers (Sliced, Seeded)
  • 6 Fresh Jalapeno Peppers (Sliced)

  • 6 Cloves Garlic (Crushed)
  • 1/2C Minced Onion
  • 3/4t Season Salt
  • 2C Water
  • 1/4C White Vinegar
  • 2T White Sugar


  1. In a large sauce pan, combine Oil, Peppers, Garlic, Onion and Salt.
  2. Cook over medium-high heat for 5 minutes, stirring frequently.
  3. Pour in Water and cook for 20 minutes (until ingredients are soft), stirring frequently.
  4. Remove from heat and allow to cool.
  5. Transfer to blender (or use an immersion blender) and puree until smooth.
  6. Pour in Vinegar and Sugar, then blend until mixed.
  7. Store refrigerated.
