Mexican Corn Salad

  • 2C Frozen Corn (Cooked & Cooled)

  • 1/4C Red Bell Pepper (Diced)

  • 1/4C Green Bell Pepper (Diced)

  • 1C Tomato (Diced)

  • 2T Olive Oil
  • 1/4t Ground Cumin
  • 1/4t Salt
  • 1/4t Pepper
  • 1t Lime Juice
  • 1T Fresh Cilantro (Chopped)


  1. Combine all ingredients in a medium bowl.
  2. Stir until combined.
  3. Refrigerate until ready to serve.
