Fruit & Berry Compote

Ingredients

  • Juice Mixture

  • 1/2C Apple Juice
  • 1T Honey
  • 2t Crystalized Ginger (Finely Chopped)
  • 2t Lemon Juice 

 

  • Fruit & Berry Mixture

  • 1/2C Strawberries (Sliced)

  • 1/2C Blueberries (Halved)

  • 2C Cataloupe Balls (or Cubes)
  • 1 Sprig Fresh Mint (Chopped)

Directions

  1. Combine Apple Juice, Honey, Ginger and Lemon Juice in a small sauce pan.
  2. Bring to boil for allow to cook for 2 minutes.
  3. Remove Juice Mixture from heat and allow to cool completely. (Cooling can be expedited by putting Juice Mixture in the freezer for a few minutes.)
  4. Combine Cantaloupe, Strawberries, Blueberries and Mint in a small bowl.
  5. Drizzle with the cooled Juice Mixture.
  6. Mix completely.
  7. Spoon into serving dishes.
