Chicken Lime Tacos

  • 8 Boneless/Skinless Chicken Breasts

  • 3/4C Lime Juice

  • 1/4C Chili Powder

  • 1 Can Corn (15 oz.)

  • 1 Jar Favorite Salsa (12-16 oz.)

  • Soft or Hard Taco Shells

  • Grated Cheddar Cheese (to taste)

  • Shredded Lettuce (to taste)

  • Diced Tomatoes (to taste)


  1. Place Chicken Breasts in a crock pot.

  2. Add Lime Juice and Chili Powder.

  3. Slow cook on Low for 3-4 hours, then shred chicken with two forks and return to crock pot.

  4. About 30 minutes prior to eating time, add the can of drained Corn and Salsa into the shredded chicken.

  5. Mix well and continue on Low for approximately 30 minutes.

  6. Put meat in taco shells with Cheese, Lettuce and Tomatoes, to taste.
