Blackberry Cake

Prep Time: 20 Minutes
Cook Time:
20–30 Minutes


  • 1/2C Butter (cut into chunks)

  • 1C All Purpose Flour

  • 1C plus 1T Granulated Sugar

  • 1t Baking Powder

  • 2 Large Eggs

  • 1C Blackberries (fresh or frozen)

  • 1T Powdered Sugar


  1. Preheat oven to 350 degrees, Butter and dust a 9-inch pan with Flour.

  2. Cream butter and 1C Sugar (approximately 3 minutes with an electric mixer)

  3. Add Eggs, Flour and Baking powder. Beat 2 minutes.

  4. Scrape stiff batter into pan and smooth.

  5. Scatter Blackberries evenly over batter.

  6. Sprinkle top with 1T of Sugar.

  7. Bake on center rack until cake begins to pull from rim (20–30 minutes.)

  8. Let cool, and dust with Powdered Sugar.
