BBQ Meat Loaf

Serves: 6–8
Prep Time:
10 Minutes
Cook Time:
30–50 Minutes

Ingredients

  • Meat Loaf

  • 1 1/4 lbs. Ground Beef (85% Lean)

  • 1 lbs. Ground Pork

  • 2C Panko Bread Crumbs

  • 1/2C Minced Red Onion

  • 1 Large Egg

  • 1t Paprika

  • 1t Worcestershire Sauce

  • 1t Garlic Powder

  • 1t Dry Tarragon

  • 1t Season Salt

  • 1t Fresh Ground Pepper

  • Sauce

  • 1/2C Bottled BBQ Sauce

  • 1/4C Ketchup

  • 1T Worcestershire Sauce

  • 1T Cayenne Pepper Sauce

Directions

  1. Light grill and heat to clean grate with brush, then set at approx. 350 degrees.

  2. In a large bowl, combine the Meat Loaf ingredients, using your hands.

  3. Divide Meat Loaf mixture in half, then form into 2 loaves about 4 inches wide and 6 inches long.

  4. Place loaves on a sheet pan.

  5. In a small bowl, combine the Sauce ingredients, then separate 6–8T of sauce to avoid contaminating whole batch.

  6. Top each Meat Loaf with 3–4T of the sauce each, then set aside the other portion of sauce.

  7. Evenly distribute sauce over the loaf, ensuring that all expose surfaces are coated.

  8. Spray grill grate with oil then, using a metal spatula, place each Meat Loaf directly onto the grate.

  9. Grill the Meat Loaves until internal temperature reaches 155 degrees.

  10. Remove Meat Loaves from grill and let rest 10 minutes. (They will continue to cook to 160 degrees recommended internal temperature.)

  11. Cut the loaves into 1/2-inch slices and serve with the reserved sauce.
